BicolExpress is a familiar delicacy when you talk about the Bicol Region in the Philippines. It is traditionally made with coconut milk, meat, and chilies. The sweetness from the coconut adds a beautiful contrast to the spiciness of chili peppers, making it a balanced gastronomical masterpiece. We tried a few places in Naga and made a surprise visit to a famous spot in Camarines Sur to try their different versions of BicolExpress. Meanwhile in the kitchen, Erwan Heussaff tries his hand making his own version of BicolExpress inspired by his recent trip to the province. Try this at home and let know what you think!
